For optimal vocal health, enjoy a glass of Watermelon Cucumber Juice from The Acid Watcher Cookbook. Watermelon (lycopene) and cucumber (lignans) act as a “food steroid,” which can reduce swelling in tissues, including the vocal cords.
Watermelon Cucumber Juice
Serves 2
Prep time: 5 minutes
Many people believe that tomatoes have the highest concentration of lycopene, which is a powerful natural anti-inflammatory agent. This is why men hear from their doctors that tomatoes are good for prostate health. However, pound for pound or milligram for milligram, watermelon has the greatest concentration of lycopenes (more than tomatoes!) and it is not acidic. Joining the anti-inflammatory brigade is cucumber, which has a high concentration of lignan also a powerful anti-inflammatory agent. The two in combination not only taste delicious, but also pack a powerful anti-inflammatory wallop, something we call “food steroids.”
1 ½ cups 1-inch cubed seedless watermelon
1 cup sliced English cucumber
Handful of ice
1 tablespoon flaxseeds (optional; see Note)
Combine all of the ingredients in a blender (see Doctor’s Note) and blend until smooth. Pour into glasses and enjoy.
Doctor’s Note
The juices in the Acid Watcher diet are blended in a blender, not juiced in a juicer. Juicing often eliminates fiber, which can also help reduce inflammation. It’s important to retain as much fiber as possible.
Note
To provide even more anti-inflammatory agents to this beverage, add 1 tablespoon flaxseeds, which contain a large amount of lignans.
